Blackened Shrimp Bites

I have been hosting Easter for years, and the whole family agreed that these little Blackened Shrimp bites better make the menu every year from here on out. They seemed to be the favorite bite of the day, even though I made some chicken piccata that was to die for. 

The pairing of the shrimp with a kick and the cool avocado crema is perfection. Even my aunt, who “doesn’t eat anything green,” gobbled them down. 

Blackened Shrimp Bites

Blackened Shrimp Bites Recipe

Ingredients:

  • 15 raw cleaned and deveined jumbo shrimp
  • 2 tbsp Blackened Seasoning by Dusted
  • 1 avocado
  • 2 tbsp sour cream
  • Juice from ½ fresh lime
  • 1 Jalapeno deseeded and stemmed
  • 1 bunch cilantro
  • Salt
  • Crumbled Cojita cheese
  • Packet of Carrs Water Crackers (or similar)

Recipe Instructions

  1. Pat your shrimp dry with a paper towel and cut them into thirds
  2. Generously season your cleaned, cut, and deveined shrimp with Blackened Seasoning. Add a drizzle of olive oil, and mix all around. Once mixed, add a little more blackened seasoning and do a final mix.
  3. Time to prepare your avocado crema. Do this before cooking your shrimp so you have everything ready to assemble when the shrimp is piping hot.
  4. Put the following ingredients into a bowl or large measuring cup that will allow you to blend with an immersion blender. If you don’t own an immersion blender, a regular blender or food processor will also work! Items to add: 1 Entire avocado (seeded and skin peeled off), 2 tbsp sour cream, 1 jalapeno (deseeded and stemmed), fresh juice from ½ lime, ½ bunch of cleaned and dried cilantro, salt. BLITZ it all up until silky smooth and set aside.
  5. Crumble your cojita cheese and chop the other half of the cilantro into small pieces and set aside.
  6. Heat a cast-iron skillet on medium-high heat until warm. Throw in shrimp pieces and cook for 1-2 minutes on each side, stirring occasionally, until nicely charred and cooked through.
  7. Take shrimp off heat immediately and put in a bowl.
  8. Time to assemble, and do it in this order: 1 Carr Cracker, 1 tsp avocado crema, crumbled cojita cheese, shrimp bite (1 or 2 depending on size), chopped cilantro
  9. Serve and eat right away before the crackers get soft
